Make a Last Days of Summer Juice

Description

The fruits in this juice are super sweet and very juicy.

The taste is tangy and minty with a slight hint of spice from the ginger. Great cold the next day from the fridge and poured over ice for breakfast on a hot summer morning.

Ingredients

  • 1 pineapple

  • 6 plums

  • 1/2 rockmelon or honeydew melon

  • 1 mint leaves (bunch)

  • 1 ginger piece 2cm

Juicing Time: 6 mins

Juice Qty: 1100ml

Serves: 4

Preparation

 Pineapple

  • Slice off the outer skin

  • Cut into long thin strips to fit down the chute

  • Chop the core into small chunks

Plum

  • Cut around the centre of the plum and twist into 2 halves

  • Cut around the centre again of the half with the stone

  • Twist into two quarters and remove the seed

  • Juice with skin on

Rockmelon

  • Remove the outer skin (you can juice it but it changes the taste)

  • Cut into small pieces to fit in the wide chute

  • You can leave the seeds intact as they easily go through the juicer

Mint

  • Remove the leaves from the woody stems

Ginger

  • Cut off a 2cm thick piece

  • Cut into thin slices leaving the skin on

Method

Start with the mint leaves. You can squash them into one handful and drop the whole lot into the chute of the juicer.

Add the plums next, a couple of pieces at a time. They will help push the mint leaves through.

Next, add the rockmelon one piece at a time.

Add all the ginger followed by the chopped-up pieces of pineapple core.

Finish with the pineapple adding one piece at a time and letting the machine push each piece through before adding more.

 

Tip: You can use any variety of plums and any type of melon for this juice recipe.
