Make Banana Bliss Energy Balls

OMG, these little balls are delicious. You need to be patient as they are much better cold, but…once you taste them, they will surely become a weekly staple. These Banana Bliss Balls are filled with healthy goodness and are a perfect ‘energy snack’ for any time you need a little pick-me-up in your busy day. And, I don’t know about you, but I found the one’s dusted with coconut taste a bit ‘bounty-like’ – totally guilt-free pleasure!

Vegan & Healthy

They are also a great lunch box filler for kids (or big kids) or a nice treat with a cup of tea/coffee. Simple and quick to make, you can fiddle as much or as little as you like to make them pretty (rolled in coconut, cacao, nuts) or leave them plain and eat them as is.

Ingredients

Makes 16 Balls

  • 1 medium-size banana (best if it’s a bit overripe)

  • 2 cups organic rolled oats

  • 1/2 cup almonds

  • 1/2 cup pecans

  • 1/3 cup maple syrup

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 2 tablespoons coconut water

Method

Step 1: Gather your ingredients and place them into the blender.

Step 2: Turn the dial slowly on your Blender to gently bring the ingredients together.

Step 3: Keep blending until you have a good ‘cookie dough’ consistency. You might need to scrape down the sides with a spatula and use your tamper to push the mix onto the blades.

Step 4: Scrape the mixture out into a bowl.

Step 5: Set up separate bowls of ‘toppings’ (coconut, nuts, dried fruit, cacao nibs).

Step 6: Use an ice cream scoop (or spoon) to put a small measure into the palm of your hand, rub your hands in opposite directions to form a small ball.

Step 7: Drop the ball into one of your ‘topping bowls’ and cover.

Step 8: When you have ‘dusted’ all of the mixture, place in the fridge to get cold.

They will last (if you can stop eating them…hehe) for about 5-7 days in the fridge.
