Description

Alternative milks are becoming very popular in the shops today and almond mylk is one of my favourites. It is easy to make in a cold press juicer and has many health benefits especially when you add some extra ingredients.

This veggie nut mylk recipe is creamy and delicate. The taste has a gentle sweetness which feels comforting and nurturing.

Ingredients

  • 250ml akaline water

  • 1/2 cup soaked almonds

  • 2 medjool dates

  • 1/2 sweet potato

  • 1 carrot

  • 1 ginger (2cm)

  • 1/4 tsp vanilla extract

  • 1 pinch Himalayan salt

Juicing Time: 1 min
Juice Qty:  500ml

Preparation

Almonds (8hrs)

  • Place almonds in a small bowl and cover with water

  • Allow to soak for 8 hrs or overnight

Dates (5 sec)

  • Cut in half and remove the stone

  • The stone will damage the strainer so make certain it is removed!

Sweet Potato (30 sec)

  • Cut into thin slices

  • Juice with the skin on

Carrots (30 sec)

  • Cut carrots lengthwise once

  • If larger carrots are used cut again lengthwise into quarters

Ginger (15 sec)

  • Cut off a 2cm thick piece

  • Cut into thin slices leaving the skin on

Method

Start by making the nut mylk first.

Keep the cap closed and add a handful of soaked almonds to the juicer chute followed by about a 1/4 of the water. Repeat with more almonds followed by more water until done.

Next add the sweet potato one slice at a time followed by the ginger slices. Take your time and let the juicer press and blend all the ingredients together.

Open the cap to release the juice.

Add the carrot halves one at a time to push all the ingredients through nicely.

Once finished mix in the vanilla extract and salt with a spoon.

Tip: you can soak nuts for up to 72 hours. If you forgot to soak the nuts overnight you can use hot water and soak them for 1 hour.

Sweet potato is high in vitamin A and a great source of beta carotene.They strengthens the spleen and pancreas helping them to remove toxins from the body. 

Dates are among the sweetest of all fruit having 60 to 70 percent of their total weight as natural sugar.  Their potassium level is also several times higher than other fruits high in potassium like the banana and the orange.
