Make Asparagus and Corn Juice

Description

Asparagus and corn go well together in soup so why not put them in a juice. I also decided to add some other veggies to make a light, refreshing, green vegetable juice.

The taste is quiet savoury with a hint of sweetness from the corn.

Ingredients

  • 10 asparagus stalks

  • 2 corn cobs

  • 1 zucchini

  • 1/2 broccoli head

  • 1 green capsicum

Juicing Time: 2 min
Juice Qty:  650ml

Preparation

Corn (2 min)

  • Remove the outer husk

  • Top and tail the corn cobs to make a flat end to stand the cob up

  • Crave down the cob to remove the kernels

Asparagus (15 min)

  • Place the stalks in the freezer for 15 mins

  • Juice whole 

Broccoli (30 sec)

  • Cut off the stem

  • Cut the stem into halves lengthwise

  • Break the florets up into small chunks to fit in the wide chute

Capsicum (30 sec)

  • Remove the green stems

  • Cut into halves or quarters to fit in the wide chute

  • Remove excess seeds

Zucchini (5 sec)

  • Cut into halves or quarters to fit in the wide chute

  • Juice with skin on

Juicing Method

Start by juicing the corn kernels. They are small and light so they need a clean juicer to easily move through the press.

Next, juice the asparagus spears one at a time.

Next juice the capsicum and zucchini. They have high water content to help push through all the asparagus.

Finish with the broccoli florets and the broccoli stem.

Tip: You might get lots of enzyme foam on the top of the juice when making this recipe. You can mix it into the juice at the end or scoop it out with a spoon and discard like I have done here.

Health Benefits

The asparagus plant is rich in the compound amino acid asparagine. This is where asparagus gets its name. It is high in glutathione peroxidase, an enzyme the body uses to create antioxidants.

If you are thinking about becoming pregnant a glass of asparagus juice supplies plenty of folate, a B vitamin essential for proper cellular division. 

Corn is one of the top nutritionally dense foods in the world. It provides nutrients for the bones, brains and teeth including  thiamin (vitamin B1), pantothenic acid (vitamin B5), folate, dietary fiber, vitamin C, phosphorus and manganese.

Broccoli is also an amazing super-food full of vitamins A, C, D, K, calcium, potassium plus healthful flavonoids and even natural Co-enzyme Q10 all of which are in the juice.

Zucchini has a high water content and an excellent source of manganese.
