Whether enjoyed by vegans or non-vegans, it's sure to be a hit!

Ingredients

  • 250g Peas, frozen

  • 25g Pine Nuts, toasted

  • 1.5 Garlic Cloves, peeled

  • 1/2 bunch Basil, leaves picked

  • 1/4 bunch Mint, leaves picked

  • 1/2 Lemon, zest and juice

  • 1/4 cup Olive Oil

  • 15g Nutritional Yeast

  • 1/2 tsp Salt

Variations:

Vegan Option (No Nutritional Yeast): Instead of using nutritional yeast, add 2 tbsp of mushroom powder and 1 tbsp of onion powder. This combination is a clever way to create a savoury, umami-rich taste that can mimic the depth of flavour found in traditional pesto. Mushroom powder, in particular, is known for its earthy and meaty notes.

Non-Vegan Option: To make the pesto non-vegan, add 1/2 cup of grated parmesan cheese. Parmesan cheese brings a sharp, salty, and nutty quality to the pesto, which is a classic element in traditional pesto recipes. This addition would appeal to those who enjoy the richness of cheese.
