Ingredients

½ cup Onions (roughly chopped)

4 Garlic Cloves - medium (roughly minced)

2 lbs Asparagus (cut into 1-inch pieces)

1 tsp Ground Cumin

1 tsp Salt

¼ tsp Ground Black Pepper

2 cups Vegetable Stock

½ cup Silken Tofu

Chives (minced, to taste)

Dill (minced, to taste)

Method

  1. Prepare the Vegetables: In a large stockpot over medium heat, add the chopped onion and minced garlic. Cook them until fragrant, which usually takes about one minute.

  2. Cook the Asparagus: Add the chopped asparagus to the pot. Season with salt and pepper. Cook the asparagus until it becomes slightly charred, which usually takes about 5 minutes. This step adds flavour to the soup.

  3. Add Vegetable Stock: Pour in the vegetable stock into the pot. Cover it and let the mixture simmer. Continue simmering until the asparagus is very tender but still green. This usually takes about 7 minutes. Cooking the asparagus in the vegetable stock will infuse the soup with its flavor.

  4. Blend the Mixture: Transfer the cooked mixture into a blender. Make sure the broth and vegetables have cooled down slightly to prevent any accidents when blending hot liquids. Add the tofu to the blender as well. Blend everything until the mixture becomes creamy and smooth. The tofu helps give the soup a creamy texture without using dairy.

  5. Season to Taste: Taste the soup and adjust the seasoning with salt and pepper according to your preference. Seasoning is crucial to bring out the flavours in the soup.

  6. Garnish: You can garnish the soup with optional chopped chives and dill. These herbs add a fresh and aromatic touch to the dish.

  7. Serve: Ladle the creamy asparagus soup into bowls and serve hot. It makes for a nutritious and flavourful meal.
