Make Carrot & Raisin Muffins - Kuvings Vacuum Blender

Description

Deliciously simple and super healthy. Sugar-free, dairy-free, fat-free and you can easily make them gluten-free.

These carrot and raisin muffins make the most of your Kuvings Blender by mixing the wet ingredients in the blender and then simply folding them through the dry. And, with the super-fine blend on the carrot and dates, the muffin is dense, but surprisingly moist.

Vegan & Healthy

They will make a great lunch box filler or a nice treat with a cup of tea/coffee. They are not super sweet, so a plant-based icing would work well, or they are delicious served warm with a scoop of icecream and a drizzle of maple syrup

You can also sub out the whole wheat flour with oat flour and make them gluten-free.

Whichever way you enjoy them, they are healthy, vegan and contain NO sugar!

Ingredients

Apple Sauce

  • 4 apples

  • 2 tbsp lemon juice

  • 2 dates pitted

  • 1 tsp cinnamon

Carrot & Raisin Muffins

  • 260g whole wheat flour* (about 1.5 cups)

  • ½ teaspoon bicarbonate soda

  • ½ teaspoon baking powder

  • 1 cinnamon stick, or 1 teaspoon ground cinnamon

  • ¼ teaspoon ground ginger

  • ⅛ teaspoon ground allspice

  • 2 whole cloves

  • ⅔ cup raisins

  • ¼ cup shredded/desiccated coconut

  • 1 medium carrot, halved

  • 1 flax egg – (1 tbsp ground flaxseeds + 2 tbsp water)

  • ¼ cup water

  • 1 cup applesauce* (see recipe below)

  • 4 dates, pitted

*To make this recipe gluten-free, sub out the whole wheat flour with Oat Flour.

Method

Step 1: Make your apple sauce

  1. Peel and core 4 apples, place into blender

  2. Add 2 tbsp lemon juice, 2 pitted dates, 1 tsp cinnamon

  3. Touch ‘power on’ button and select auto blend button. Let the Blender do its thing.

  4. Set aside.

Step 2: Make your flour

  1. Place your oats into the blender and place the lid on the jug and the noise-reduction cover on.

  2. Touch ‘power on’ button and select auto blend button. Let the Blender do its thing.

Step 3: Make the muffins

  1. Preheat the oven to 350°F (180°C). Wipe coconut oil around your 12 cup muffin tin.

  2. Place flour, baking soda, and powder in a medium-size mixing bowl and stir lightly. Set aside.

  3. Place carrot, flax egg, dates, water, spices and applesauce into the Kuvings Blender Jug and secure lid.

  4. Blend on Auto until done.

  5. Pour it into the flour mixture and add raisins and coconut.

  6. Spoon the mixture into the prepared muffin tin.

  7. Bake for 20-25 minutes until golden brown.

  8. Transfer to a wire rack to cool, then serve.

They will remain fresh and moist in a sealed container for about a week.
